Hello! How was your weekend and 4th of July?
Ours was busy…and unfortunately I didn’t snap many pictures to commemorate. Bad blogger, I know.
My brother-in-law and family came down for a quick visit Saturday afternoon to Sunday morning. We enjoyed seeing them and their kids. His brother is in the military, too, so getting together is challenging despite them only being a few hours away. All the kids have gotten so big since we last saw them! The youngest is nearly 3 and is at the stage where he’ll talk your ear off just to hear himself speak. It was cute.
He instantly made friends with Ava. I think because she finally had someone her own height to play with.
Here’s a cute clip I caught of them playing. Not sure what my nephew is doing, but Ava’s enjoying it!
We went to an early 4th of July cookout on Sunday. I found a recipe for a No-Bake Lemon Icebox Pie from Dreaming in DIY and knew it would be the perfect treat to bring.
It was incredibly easy to make and turned out perfectly. The pie filing only has three ingredients! The recipe calls for a Lemon Oreo Crust (yum!), but I went with a regular graham cracker crust instead.
I’m sure the Lemon Oreo crust would have set this pie over the top..but being that I’m a personal trainer going to a cookout hosted by one of my clients, it was probably best I leave to cookies out of it. It was bad enough I was bringing a pie! I’m sure they expected me to bring a veggie tray or something.
The graham cracker crust was very easy to make, too. All it took was:
- 1.5 cups finely crushed graham cracker crumbs (about 1.5 packs)
- 1/3 cup sugar
- 6 T melted butter
Combine ingredients, press into pan, and bake at 375º for 7 minutes. Let cool before adding filling.
I’ve made a lot of graham cracker crusts in my day, but this was the best! (Thanks to the sugar.) Definitely a recipe to keep.
Monday and Tuesday were normal work days for me, except I didn’t have to go back for afternoon sessions due to the gym closing early. I took advantage of the extra free time and took Ava to the beach.
Excuse the weird face. I was making kissing noises to get her attention and she licked me right before I snapped the picture.
It was HOT at the beach, despite the breeze. Ava actually got neck-deep in the water which is the furthest she’s ever been in. However she hasn’t quite grasped the concept of swimming yet and kept getting hit in the face by waves.
I brought a small bowl of cherries and kiwi to snack on. One of my July goals is to diversify my diet, which includes eating more fruit. I’ve never been a huge fruit-eater except for putting it in oatmeal, but I’d like Baby T to get a taste for it.
Anybody else eat kiwi with the skin on? I’ve always eaten it that way, but apparently it’s “weird”.
Marcus had duty on the 4th and I certainly didn’t feel like fighting crowds by myself, so no fireworks this year. Ava’s not a fan of fireworks and needed a buddy to stay calm her, anyway.
Talk to you soon!
Question: What did you do for the 4th of July? Did you see or set off any fireworks?
